This is such a simple recipe. It is yummy and so quick.
1/2 c chicken broth, plus set aside 1/4 c
1/2 c sweet potato puree (I use baby food)
2 T soy sauce
1 T brown sugar
1 tsp sesame oil
2 tsp cornstarch
2 T olive oil
3 garlic cloves, minced
4 green onions, sliced
boneless pork chops or boneless chicken breast – sliced into thin strips or shrimp
angel hair pasta, cooked and drained
- Whisk together the 1/2 c chicken broth, sweet potato puree, sesame oil, cornstarch and set aside.
- Heat the olive oil and add the garlic, onion and meat strips. Cook until the garlic and onions are soft and the meat is nearly cooked through, 4 -5 minutes or so.
- Add the soy sauce mixture and pasta to the meat mixture and decrease the heat to low. Cook for 1 –2 minutes until all the noodles are coated.
- Add the remaining chicken broth if the mixture is too thick.
